The Best Cream Cheese Brownies.....ever!

Chocolate and cream cheese, they had me the minute my eyes fell on this recipe as I scanned the cookbook that came with my new KitchenAid Mixer. Two of my favorite ingredients in one recipe, I couldn't wait to get started.

What the heck is a double boiler?

For this recipe you will need a double boiler. A double boiler is a kitchen tool that consists of 2 pots. One sits inside of the other and its used to melt or gently cook food that might otherwise scorch over direct contact with the heat source. The pot on the bottom contains hot water and the upper pot traps steam to slowly cook or in the case of this recipe melt delicate ingredients so they can be combined.

My Favorite Cream Cheese Brownie Recipe!

I've tried a number of different recipes for Cream Cheese Brownies but this is my favorite. It's from the KitchenAid Cookbook that came with my mixer back in the 1980's. And yes, that's how long I've had my KitchenAid mixer, the very same mixer all these years and she's still going strong. Notice I refer to her as a she - anything that dependable has to be female.

Ingredients

Scale

1 cup butter or margarine (I prefer using butter.)

4 squares (1 oz. each) unsweetened chocolate

2 ½ cups sugar

4 eggs

1 cup all-purpose flour

½ tsp. salt

1 cup chopped walnuts

2 tsps. vanilla extract

1 8 oz. package cream cheese, softened

Instructions

1. Melt butter and chocolate in double boiler over boiling water. Remove from heat and set aside.

2. Place  2 cups of sugar and 3 eggs in bowl. Attach bowl and flat beater. Turn to Speed 4 and beat a minute and a half, then stop and scrape bowl. Turn to Speed 4 gradually add chocolate mixture beating until well blended. Stop and scrape bowl. 

3. Add flour, salt, walnuts, and 1 tsp. vanilla. Turn to Speed 2 and beat 1 minute., until well-blended. Remove bowl and set aside.

4. Place remaining sugar, egg, vanilla, and cream cheese in clean bowl. Attach bowl and flat beater. Turn to Speed 2 and beat 30 seconds. Stop and scrape bowl. Turn to Speed 6 and beat 1 minute.

5. Using a medium ice cream scoop ( 2 tbsp.), drop chocolate and cream cheese batter by scoops full into a greased and floured 9 x 13 x 2 inch pan. Swirl the batters lightly with a knife, Bake at 350F for 45 to 50 minutes. When cool, cut into 24 2 x 2"  squares.
