A delicious and moist yet easy Banana Nut Bread recipe to create using your KitchenAid Stand Mixer. This recipe is from the 1987 KitchenAid Cookbook.

Ingredients

Scale

⅓ cup shortening

½ cup sugar

2 eggs

1 ¾ cups all purpose flour

1 teaspoon baking powder

½ teaspoon baking soda

1 cup mashed ripe bananas

½ cup chopped walnuts

Instructions

1. Place shortening and sugar in mixer bowl. Attach bowl and flat beater to KitchenAid stand mixer. Beat at Speed 6 for 1 minute. Stop and scrape bowl. Beat an additional minute at Speed 6, then turn to Speed 4 and add eggs one at a time. Beat 30 seconds. Stop and scrape bowl. Turn speed to 6 and beat for 1 and ½ minutes.

2. Sift together flour, baking powder, baking soda and salt into a separate bowl. Turn to Stir Speed and half of flour mixture and half of mashed bananas. Mix for 30seconds then add remaining flour mixture and mashed bananas. Mix an additional 30 seconds. Stop and scrape bowl. Blend walnuts in on Stir Speed, about 15 seconds.

3. Pour mixture into greased and floured 9x5x3 inch loaf pan. Bake at 350F for 40 to 45 minutes. Remove from pan and cool on a wire rack.

Notes

Over-ripe bananas make for the best results.
