What is lemon tea bread?

This recipe sits somewhere between pound cake and a quick bread. Unlike he spreads, it relies on baking powder or baking soda for lift, which means there's no rise time and no needing. The result is a moist dense but tender loaf designed for slicing.

Why use a KitchenAid stand mixer?

A stand mixer makes quick breads more consistent because it creams the butter and sugar Efficiently, which creates tiny air pockets that help with lift and texture. Using a Kitchenaid stand mixer offers a few advantages including beta creaming giving the loaf a finer crumb, easy incorporation, and less mess.

Success for your Tea Bread

Use fresh lemons. Although bottled juice may work, fresh lemon zest and juice carry the strongest flavor. Zest before juicing, as a whole lemon is much easier to handle Using butter gives richness and helps with structure Unsalted butter lets you control the salt level. All purpose flour keeps a crumb sturdy enough for slicing. And be sure to use a small amount of vanilla which will help round out the citrus notes. Don't over mix once the flower goes in, mix only till combined. Overmixing develops gluten and makes the bread tough. Let it rest at least 20 minutes before slicing. The structure continues setting after baking.
