Easy Cucumber Pineapple Salad is the perfect side dish with any grilled protein. Its fresh flavor notes refresh the palette and can feature a wide variety of fresh herbs.
1 English cucumber, cut into 3/4 inch chunks
1 fresh pineapple, cut into 3/4 inch chucks (Note: canned pineapple can be used but be sure it is packed in juice, not syrup.)
2 limes, zested and juiced
1/4 cup of fresh herbs (fresh mint, basil, parsley are good choices)
red onion optional, cut into very thin pieces.
salt & pepper, optional
Combine all ingredients and toss lightly making sure to distribute juice, zest and herbs as evenly as possible.
Serve immediately or keep chilled in fridge for up to 3 days.
