The beauty of an Ina Garten recipe is its simplicity. This lemon vinaigrette exemplifies her premise that eating homemade can be simple yet satisfying. This is the perfect dressing to brighten a salad instead of overwhelming it. The 4 ingredients are staples you already have in your pantry.

  • Really good extra virgin olive oil
  • Fresh squeezed lemon juice
  • Kosher salt
  • Fresh ground pepper

Mixing the Lemon Vinaigrette

Like the majority of her recipes, Ina uses equipment we all have in our kitchens to mix her lemon vinaigrette salad dressing. To make this vinaigrette, take ¼ cup of freshly squeezed lemon juice in a small bowl. Add to that ½ cup of Extra Virgin Olive Oil. Sprinkle in ½ teaspoon of fresh ground black pepper and 1 teaspoon of kosher salt. Combine the ingredients by vigorously whisking them together. Another cool Barefoot Contessa idea is to pour the salad dressing in the bowl you will be serving the salad in, and then place the greens and salad components on top of it. Then when you are ready to serve the salad, just toss it and it will look fresh and crisp, not soggy.

How long can you store Lemon Vinaigrette?

You can store the vinaigrette in the refrigerator for up to 10 days. If the olive oil hardens in the fridge, leave it at room temperature for 10-15 minutes and then shake the jar or whisk in a bowl, then toss in your salad. It can be frozen in an airtight container for up to 2 months but when thawed out it will taste as "fresh".

Ingredients

¼ cup fresh squeezed lemon juice

½ cup of extra virgin olive oil

1 tsp kosher salt

½ freshly ground black pepper

Instructions

Place all the ingredients in a small bowl.

Briskly whisk the ingredients together.

Notes

The salad dressing can be stored in the refrigerator for up to 10 days. Use a canning jar to store and keep the lid tightly sealed.
