Shepherd's Pie ...for the Mom on the go!
Shepherd’s Pie…..where did it get that name? No self-respecting shepherd would be caught eating ground beef and it’s a casserole not a pie! Actually some foodie is going to point out to me in the comments section that today’s version is different than the historical version. So living in today’s world, shepherd’s pie is the most forgiving dish and a blessing for Mom's everywhere who are on a tight schedule. It’s not fussy as to ingredients. There are no advanced culinary techniques needed. And it’s a great way to get veggies into your kids.
Preparation is pretty easy. All you need is a fry pan and a casserole dish for containers. If you can mash a potato and brown some ground beef you are on your way to culinary success. If you’re short on time you can even get away with using instant mashed potatoes but it’s better with the real thing!
Shepherd’s Pie - easy, peasy comfort food
Tasty, quick and easy, this casserole is a blessing to bust Moms everywhere!

Ingredients
- 2 chopped medium onions
- 1 lb. ground beef
- 2 tbs. ketchup
- ½ tsp. Worcestershire sauce
- 1 16 oz. bag of frozen veggies, thawed or a like amount of any leftover veggies you might have around
- 4 to 6 cups mashed potatoes
- ¼ cup milk
- 3 tbs. butter
- Pinch of salt
Instructions
- Preheat oven to 425F
- Brown onion and ground beef in a large skillet. Drain well.
- Add ketchup and Worcestershire sauce to onions and ground beef.
- Pour into a greased 8”x8” square baking dish.
- Pour veggies over meat mixture and spread evenly.
- Beat together potatoes, milk, butter and salt.
- Spread potatoes over veggie layer. Seal to the edge.
- Bake at 425F for 35 minutes.

Yummy! I'm pinning this. I had a recipe that used campbell's condensed soups but since I'm trying to make things from scratch and not use processed foods like that I haven't make the recipe in awhile. Shepherds pie should be made with mutton or lamb. When using beef it is a cottage pie.

You are absolutely correct but the majority of people who aren't foodies refer to the ground beef version as shepherds pie. My purpose when doing a recipe post like this is to make it easy for people to find through the search engines. So I refer to it as shepherds pie, as do a number of cookbooks, for that reason. Thanks for pointing it out as it will make people aware that there is a difference and aware of the correct terminology. I am by no means a "foodie" so I probably make a lot of mistakes like this.

I make this dish but nearl always use corn but the mix veggies sound great in it as well may try it next time
