Discovering the Shamrock Shake - a treat from Miami
Traveling is always fun, but my recent trip to Miami has to be one of my favorite adventures I've ever gone on. I stayed at the Fontainebleau, ranked amongst some of the top hotels in Miami, which was just amazing, and I had an incredible time exploring the city.
The best part of the entire trip, though - and I am not kidding about this - was when I discovered the healthy Shamrock Shake!
I've had Shamrock Shakes before. They're a staple around St. Patrick's Day, and I find myself purchasing and drinking far too many. They're so unhealthy that I always feel guilty and regret drinking them in the first place. For the first time, in Miami, I found a Shamrock Shake that is far, far healthier than any of the others I've had, and it tastes just as good - maybe even better!
As soon as I tasted it, I knew I needed to get the recipe for this smoothie and bring it back with me to Chicago so I could share it with the friends and family. It may sound ridiculous to say that the best part of a trip to Miami was discovering a shake, but you have no idea how excited I am to bring this back for everybody!
PrintShamrock Shake – Healthy, Paleo Version
The recipe I'm sharing here makes 4 cups of shake, so if you're making it for a larger or smaller crowd, you can adjust accordingly.

Ingredients
- - 1 can coconut milk (if you're using a different type of milk, use 1 ¾ cups instead)
- - 2 ½ tablespoons of pure raw honey or any other sweetener of choice (you can use up to 3 tablespoons of the sweetener, so you can experiment with how sweet you like your smoothie)
- - 1 tablespoon pure vanilla extract
- - 1 teaspoon pure peppermint extract
- - 1 peeled avocado, with the seed removed
- - 1 cup of ice
Instructions
- Blend the ingredients together in your blender. It's that simple.
- Then pour it into whatever glasses you want.
- The avocado will add a green tint to the smoothie, but if you want to make it even more festive, you can add some green food coloring. You can never go too green for St. Patrick's Day!
