Nutritious, Quick & Easy Cucumber Pineapple Salad

This tasty combination of cucumber and pineapple creates a salad that's a fresh, summery side dish for a backyard barbecue. I serve cucumber pineapple salad with grilled meats and with fish dishes as it pairs nicely with most any grilled main dish. Aesthetically pleasing, this fruit salad is nutritious and fresh, and low in calories for those watching their calorie intake.

How to prepare Pineapple Cucumber Salad

Preparation for Pineapple Cucumber Salad is so easy. The pineapple should be cut into chunks and the cucumber sliced. Peeling the cucumber is really a personal preference. English cucumbers have thin skins so they really don't need to be peeled, just thoroughly washed. When basil leaves are processed they should be stacked on top of each other, then rolled into a tight cylinder, and then thinly sliced to create ribbons. Parsley can be used to add freshness and as a garnish. If using fresh thyme, leaves should be gently stripped from stems. After the ingredients are combined, the cucumber pineapple salad should rest for at least 30 minutes in the refrigerator to allow flavors to combine and the salad to chill thoroughly.

How to Store Easy Pineapple Cucumber Salad

This pineapple cucumber salad can be stored in the refrigerator for 2 or 3 days. After that the salad tends to get watery and soggy but it is so quick and easy to make storing isn't a big issue.

How to Choose the Perfect Fresh Pineapple -

When choosing a fresh pineapple, you should take into account 4 things - color, smell, weight and feel. For color you want a pineapple that has a little bit of green and a lot of yellow visible on its exterior. The leaves will be a green without blemishes or brown spots. A nice golden color with each "diamond section" framed in a bit of green is perfect.

For smell, you are looking for a scent that is sweet but not overwhelming. An underripe pineapple will have very little scent. An over-ripe pineapple will have a strong, vinegar-like smell. Pineapples tend to taste like they smell so if they smell sweet and bright, they will most likely taste good. For weight, you want the pineapple to have some weight to it when you pick it up. A pineapple that is lighter in weight may be drying out and past its prime. Finally the feel of the pineapple is important. A pineapple that is rock-hard to the touch is under-ripe and a pineapple that is mushy feeling is past its prime. Look for a pineapple that is still somewhat firm but yields a bit to the touch when you press the flesh with your finger.

Ingredients

1 English cucumber, cut into ¾ inch chunks

1 fresh pineapple, cut into ¾ inch chucks (Note: canned pineapple can be used but be sure it is packed in juice, not syrup.)

2 limes, zested and juiced

¼ cup of fresh herbs (fresh mint, basil, parsley are good choices)

red onion optional, cut into very thin pieces.

salt & pepper, optional

Instructions

Combine all ingredients and toss lightly making sure to distribute juice, zest and herbs as evenly as possible.

Serve immediately or keep chilled in fridge for up to 3 days.
